Foodie Friday: Summer Fruit Savor-Style
July 31, 2015
Summer is one of the best times to head to the farmers’ market. And with an abundance of produce at their peak in flavor, there are endless meals to be made with whatever you bring home! Shake things up a bit and take advantage of summer’s bounty with these creative ways to serve some of summer’s most refreshing fruit.
Summer Fruit Salad with Arugula and Almonds
Perfect for those days it’s too hot to turn your oven on, this savory and sweet salad can be made with whatever fruit looks best at the market. For example, ripe green or black figs work very well in this and a couple of crushed ones can be substituted in the vinaigrette in place of the nectarine.
Chilled Peach Soup with Fresh Goat Cheese
This sweet and tangy summer soup gets a burst of flavor from fresh peaches that have been marinated overnight with dried apricots, honey, vinegar and olive oil.
Vietnamese Pork Chops with Cantaloupe and Basil Salad
At its best, cantaloupe can be tender, juicy, and sweet. Its sweetness pairs very well with salty meats and cheeses- Prosciutto e melone anyone? This recipe gives the iconic pork and melon pairing a unique twist with fresh Vietnamese flavors.
Grilled-Fruit Bruschetta with Honey Mascarpone
This farm to fork dessert from Food & Wine is a fantastic showcase for seasonal fruit at its peak! Caramelizing the fruit on the hot grill intensifies its flavor, and the grilled bread served alongside soaks up the sweet juices.
Cantaloupe Skewers with Lime Zest and Chili Powder
This is a quick and refreshing way to zest up one of the best fruits of the summer. A little bit sweet, a little bit spicy and very delicious!
